Whole-Roasted Seasoned Cauliflower
Servings: 4-6
Ingredients:
- 1 head cauliflower
- 1/4 cup lemon juice
- 2 tsp. lemon zest
- 1/2 cup Nutiva Coconut Oil with Buttery Flavor
- 1 tsp. minced garlic
- 1/2 tsp. ground cumin
- 1/4 tsp. turmeric
- 1/4 tsp. black pepper
- 1 tsp. dill
- 1/4 tsp. Selina’s Celtic Sea Salt
- 3 Tbsp. fresh parsley, diced

Instructions:
- Preheat oven to 350°F. Fill a baking dish with 1/2” of water and place on the bottom rack of the oven.
- In a bowl, melt coconut oil and mix in lemon juice, lemon zest, garlic, cumin, turmeric, black pepper, dill, sea salt, and fresh parsley.
- On a separate baking tray, thoroughly coat the cauliflower with the marinade.
- Roast the cauliflower for 1 hour and 10 minutes.
- Tip: To brown the cauliflower edges, broil for the last 3-5 minutes of cooking.
