Vegan Eggplant Pizza Bites

Ingredients:
- 1 medium eggplant cut into ¼” slices
- 1 tsp. Redmond Real Salt
- 3 tsp. minced garlic
- 2 Tbsp. olive oil
- 2 Tbsp. Italian seasoning
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1 cup Organicville Organic Pizza Sauce
- 1 cup shredded vegan mozzarella cheese
- 1/4 cup tomatoes sliced
- 1/4 cup fresh basil
Instructions:
- Preheat oven to 400°F.
- Arrange eggplant slices on paper towels. Sprinkle salt thoroughly over each slice. Let sit for 15 minutes, then wipe away moisture.
- In a small bowl, combine minced garlic, olive oil, Italian seasoning, dried basil, and dried oregano.
- Brush the garlic and herb mixture over each eggplant slice. Bake for 15 minutes.
- Flip slices, top each with 1 tablespoon pizza sauce, a slice of tomato, and a sprinkle of vegan mozzarella cheese.
- Bake for another 10 minutes or until cheese is fully melted.
- Garnish with fresh basil before serving.
