Vegan Chickpea Soft Tacos - My Store

Ingredients:

Garnish

  • Lemon wedges
  • Green onions chopped
  • Sprouts

Instructions:

  1. In a skillet over medium heat, heat oil and sauté chickpeas, red pepper, garlic, curry powder, paprika, and salt for 5-7 minutes.
  2. In a bowl, stir together spinach, parsley, and vegan cream cheese.
  3. On a griddle, grill pan, or skillet over medium-high heat, heat wraps one at a time for 10-15 seconds per side.
  4. On plates, lay out wraps and spread a layer of the cream cheese and spinach mixture across the center. Top with spoonfuls of the chickpea mixture.
  5. Garnish with a squeeze of fresh lemon, chopped green onions, and sprouts.
