Superfood Kale Salad
Total time: 10 minutes
Makes: 3 servings
Ingredients:
- 1 bunch kale, center ribs and stems removed (save stems and ribs for juicing or eating later)
- 1 avocado
- 1 tablespoon apple cider vinegar
- 1 1/2 tablespoons flaxseed oil
- 3/4 teaspoon sea salt or 2 teaspoons amino acids
- 1/4 cup nutritional yeast
- 2 tablespoons raw sunflower seeds
- 2 tablespoons raw or roasted pumpkin seeds
Instructions:
- Tear the kale leaves into small pieces and place in a large bowl.
- Massage the avocado into the kale pieces with your fingers, coating thoroughly.
- Add the remaining ingredients to the bowl and stir, or continue massaging with your fingers until well combined.
Tip: For immune-boosting benefits, add 2 teaspoons garlic powder.
