Superfood Kale Salad

Superfood Kale Salad - My Store

Makes: 3 servings

Ingredients:

  • 1 bunch kale, center ribs and stems removed (save stems and ribs for juicing or eating later)
  • 1 avocado
  • 1 tablespoon apple cider vinegar
  • 1 1/2 tablespoons flaxseed oil
  • 3/4 teaspoon sea salt or 2 teaspoons amino acids
  • 1/4 cup nutritional yeast
  • 2 tablespoons raw sunflower seeds
  • 2 tablespoons raw or roasted pumpkin seeds

Instructions:

  1. Tear the kale leaves into small pieces and place in a large bowl.
  2. Massage the avocado into the kale pieces with your fingers, coating thoroughly.
  3. Add the remaining ingredients to the bowl and stir, or continue massaging with your fingers until well combined.

Tip: For immune-boosting benefits, add 2 teaspoons garlic powder.
