  1. In a pot, cover potatoes with 2” water. Bring to a boil and cook for 17 minutes or until potatoes are completely soft. Drain.
  2. Meanwhile, in a frying pan over high heat, heat avocado oil. Cook onion for a few minutes, stirring regularly to avoid burning. Add garlic and continue cooking for 2 minutes.
  3. In the pot with potatoes, add plant-based milk, buttery coconut oil, sea salt, and pepper. Mash until completely smooth.
  4. Stir in cooked onions and spinach. Cover for a few minutes to let the hot potatoes wilt the spinach.
