Spicy Thai Noodles with Sunflower Satay Sauce - My Store

Ingredients:

Noodles

  • 1 large sweet potato
  • 2 green onions chopped, to garnish

Sunbutter Sauce

Optional: 1/2 tsp. red chili flakes

Instructions:

  1. Cook noodles according to package directions; drain and set aside.
  2. Use a spiralizer or vegetable peeler to create sweet potato noodles. Combine with the cooked rice noodles.
  3. In a saucepan over medium heat, combine oils, chopped green onions, garlic, and ginger; sauté until golden brown, about 4 minutes.
  4. Lower heat and stir in remaining sauce ingredients; cook on low for 7 minutes until sauce thickens.
  5. Pour sauce over noodles and stir until well coated.
  6. Garnish with chopped green onions and fresh lime juice before serving.
