  1. Cook pasta according to package directions. Drain and set aside.
  2. In a sauté pan over medium-high heat, heat olive oil and add jackfruit, garlic, paprika, turmeric, onion salt, and hot sauce. Stir-fry for 5–7 minutes until well combined and heated through.
  3. Add penne, purple onion, green pepper, and mango to the pan; stir-fry for 5 minutes.
  4. Sprinkle with crushed chili pepper and dried parsley before serving.
