Instructions:

  1. Preheat oven to 400°F.
  2. In a medium bowl, blend gluten-free flour and salt. Add hot water slowly until dough is only slightly sticky. Let rest at room temperature for at least 10 minutes.
  3. On a floured surface, knead the dough for a couple of minutes. Roll out to about 1/8" thickness.
  4. Cut dough into rectangles approximately 1.5" x 3" each.
  5. Mix together the pizza sauce and vegan cheese until well combined.
  6. Place a teaspoon of filling in the center of each dough rectangle. Moisten the sides, fold dough in half lengthwise to form a filled rectangle, and press edges lightly to seal.
  7. Arrange pizza rolls on a baking sheet. Brush each with a small amount of olive oil. Optionally, sprinkle additional cheese on top.
  8. Bake for 25 to 28 minutes or until golden and crisp.
