Baked Feta Pasta - Vegan Version! - My Store

  1. Preheat oven to 450°F.
  2. In a baking dish, place vegan feta in the center and arrange tomatoes and garlic around it. Season with salt, pepper, oregano, and thyme. Drizzle oils over everything. Bake for 30 minutes.
  3. Cook pasta according to package directions; drain and set aside.
  4. Remove baking dish from oven and smash together feta, tomatoes, and garlic with the back of a wooden spoon.
  5. Add pasta, crushed red pepper flakes, basil, and parsley. Toss and stir until well combined. The sauce should be creamy and saucy.
  6. Serve with vegan parmesan or nutritional yeast sprinkled on top, if desired.
