  1. Preheat oven to 300°F. Line a baking sheet with parchment paper.
  2. Using an electric mixer, beat egg whites and baking powder until stiff peaks form.
  3. In a separate bowl, beat vegan cream cheese, melted coconut oil, egg yolks, and salt until smooth.
  4. Using a spatula, carefully fold egg whites into the cream cheese mixture.
  5. Scoop mixture into six even discs on the baking sheet.
  6. Bake for 22 to 25 minutes, until golden.
