Chocolate-Dipped Matcha Bites

Serves: 11
Ingredients:
- 1 cup Bob’s Red Mill Paleo Baking Flour
- 3/4 tsp. vanilla extract
- 1/4 tsp. Redmond Sea Salt
- 1 Tbsp. Nutiva Organic Coconut Oil
- 3 Tbsp. shredded coconut
- 8 pitted dates
- 1 tsp. SunButter Natural Sunflower Butter
- 6 Tbsp. raw walnut butter with cashews
- 1-1/2 tsp. matcha powder
- 1 Hu Simple Dark Chocolate Bar
Instructions:
- In a food processor, combine all ingredients except the chocolate bar; blend until well combined.
- Roll the dough into 11 balls.
- Over low heat, melt the chocolate. Working one at a time, coat each ball in chocolate until fully covered; arrange on a plate.
- Refrigerate for 10 minutes until set.
