Instructions:

  1. Preheat oven to 350°F. Lightly grease two baking sheets.
  2. In a medium bowl, stir together oats, flours, coconut sugar, salt, and shredded coconut.
  3. In a separate bowl, mix melted buttery coconut oil and maple syrup until well combined. Stir in sunflower seed butter until smooth.
  4. In a large bowl, stir baking soda into boiling water. Stir in coconut oil mixture, then add dry ingredients and mix well.
  5. Drop dough by the teaspoonful onto prepared baking sheets.
  6. Bake for 15 minutes, until dark brown and crisp.
