Walnut Crusted Salmon
Total Time: 35 minutes
Makes: 4 servings
Ingredients:
- 1 tablespoon coconut oil (optional, if not using parchment paper)
- 1 cup walnuts, processed to a chunky meal in a blender
- 1 teaspoon dried sage
- 1/2 teaspoon sea salt
- 2 tablespoons fresh dill, diced
- 1 teaspoon dried thyme
- 1 1/2 pounds skinless salmon, cut into 4 pieces
- 1 handful of broccoli sprouts
Instructions:
- Preheat the oven to 380°F.
- Line a baking sheet with parchment paper or lightly coat with coconut oil.
- Mix the walnut meal, sage, sea salt, and thyme in a bowl. Press each salmon fillet into the walnut mixture to coat both top and bottom.
- Transfer the coated salmon to the prepared baking sheet.
- Bake for 7 minutes. Check if the salmon is flaky and cooked to your liking; bake up to an additional 7 minutes depending on thickness.
- Serve with a sprinkle of broccoli sprouts.
Tip: Serve the salmon with a green salad and/or Garlic Mashed Potatoes.
