Walnut Crusted Chicken Tenders - My Store

Makes: 4 servings

Ingredients:

  • 1/3 cup walnut meal
  • 1/2 cup almond flour
  • 1 1/2 tablespoons turmeric powder
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 eggs
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon extra-virgin coconut oil for the baking tray
  • 1 handful broccoli sprouts, for garnish

Instructions:

  1. Preheat the oven to 450°F.
  2. In a bowl, mix walnut meal, almond flour, turmeric, salt, and pepper until well combined.
  3. Beat the eggs in a separate bowl.
  4. Cut the chicken into tenders. Dip each tender into the egg, then into the breading mixture, turning to coat well on all sides.
  5. Oil a baking tray and place the coated chicken tenders on it.
  6. Bake for 15 to 20 minutes until golden and cooked through.
  7. Serve garnished with a sprinkle of broccoli sprouts and a side salad.
