Walnut Crusted Chicken Tenders
Makes: 4 servings
Ingredients:
- 1/3 cup walnut meal
- 1/2 cup almond flour
- 1 1/2 tablespoons turmeric powder
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon extra-virgin coconut oil for the baking tray
- 1 handful broccoli sprouts, for garnish
Instructions:
- Preheat the oven to 450°F.
- In a bowl, mix walnut meal, almond flour, turmeric, salt, and pepper until well combined.
- Beat the eggs in a separate bowl.
- Cut the chicken into tenders. Dip each tender into the egg, then into the breading mixture, turning to coat well on all sides.
- Oil a baking tray and place the coated chicken tenders on it.
- Bake for 15 to 20 minutes until golden and cooked through.
- Serve garnished with a sprinkle of broccoli sprouts and a side salad.
