Simple Turmeric-Spiced Meatballs in Curry Sauce - My Store

Ingredients:

    Meatballs

    Curry Sauce

    • 1/4 cup olive oil
    • 1 large yellow onion, diced
    • 2 cloves garlic, crushed
    • 1 Tbsp. curry powder
    • 3/4 tsp. sea salt
    • 1/4 tsp. black pepper
    • 1 tsp. turmeric
    • 1 tsp. Simply Organic Cumin
    • 1 tsp. coriander
    • 1 Tbsp. fresh ginger, diced
    • 2 carrots, sliced into circles
    • 1 can coconut milk
    • 3/4 cup tomato sauce (or 1-1/4 cups cherry tomatoes, blended)
    • 1/2 Tbsp. Nutiva Coconut Sugar

    Instructions:

    1. In a large pan, heat coconut oil over medium heat.
    2. In a bowl, mix together all meatball ingredients except olive oil.
    3. Shape mixture into 4 equal-sized patties.
    4. Fry patties in olive oil until golden, about 4 minutes on each side.
    5. Prepare curry sauce in the same pan by sautéing onion, garlic, curry powder, salt, pepper, turmeric, cumin, coriander, ginger, and carrots.
    6. Add coconut milk, tomato sauce, and coconut sugar; simmer until sauce thickens.
    7. Add cooked meatballs to sauce and heat through before serving.
