Quinoa-Walnut Crusted Chicken
Total Time: 25 minutes
Serves: 4
Ingredients:
- 1 lb. organic chicken breast cut into 2”x3” pieces
- 1 Tbsp. Nutiva Organic Coconut Oil with Buttery Flavor
Breading
- 1 cup walnuts blended into flour consistency
- 2 Tbsp. uncooked quinoa
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- 2 Tbsp. turmeric
- 1 tsp. dried thyme
- 1/2 tsp. dried oregano
Instructions:
- Preheat oven to 450°F. Grease a baking tray with buttery coconut oil.
- In a large bowl, combine breading ingredients.
- Working one piece at a time, dip chicken into breading. If breading doesn’t stick, wet the chicken slightly before coating.
- Bake for 15 to 20 minutes, until golden brown and chicken is cooked through.
