Instructions:

  1. Preheat oven to 350°F. Line baking sheet with parchment paper.
  2. In a food processor, blend onion and spinach. Stir in garlic.
  3. In a large bowl, combine beef, onion-spinach blend, apple cider vinegar, pasta sauce, egg, and meatball seasonings. Roll mixture into evenly sized meatballs; arrange on prepared baking sheet. Bake 35 minutes.
  4. Meanwhile, in a large pot, bring water and soup spices to a boil.
  5. Stir in broccoli, cauliflower, onion, garlic, celery, and coconut oil. Boil 15 minutes until vegetables are soft.
  6. Stir in tomato sauce and meatballs; cook until flavors combine. Remove from heat and let sit 10 minutes before serving.
