Keto Meatball Soup

Ingredients:
Meatballs
- 1 small yellow onion
- 1 cup spinach
- 3 tsp. minced garlic
- 1 lb. organic grass-fed beef
- 1/2 tsp. Bragg Organic Raw Apple Cider Vinegar
- 2 Tbsp. Rao’s Homemade All-Natural Pasta Sauce
- 1 egg
- 1/2 tsp. cumin
- 1/2 tsp. thyme
- 1/2 tsp. turmeric
- 1/2 tsp. oregano
- 1/2 tsp. black pepper
- 1/2 tsp. Redmond Real Salt Ancient Sea Salt
Soup
- 16 cups water
- 1/2 tsp. rosemary
- 1/2 tsp. oregano
- 1/2 tsp. thyme
- 1/2 tsp. turmeric
- 1 tsp. Redmond Real Salt Ancient Sea Salt
- 1 tsp. black pepper
- 1/2 tsp. Bragg Organic Sprinkle 24 Herbs and Spices Seasoning
- 1/2 yellow onion chopped
- 1 head cauliflower chopped
- 1 head broccoli chopped
- 4 stalks celery chopped
- 3 tsp. minced garlic
- 2 Tbsp. Nutiva Organic Coconut Oil with Buttery Flavor
- 1 cup Rao’s Homemade All-Natural Pasta Sauce
Instructions:
- Preheat oven to 350°F. Line baking sheet with parchment paper.
- In a food processor, blend onion and spinach. Stir in garlic.
- In a large bowl, combine beef, onion-spinach blend, apple cider vinegar, pasta sauce, egg, and meatball seasonings. Roll mixture into evenly sized meatballs; arrange on prepared baking sheet. Bake 35 minutes.
- Meanwhile, in a large pot, bring water and soup spices to a boil.
- Stir in broccoli, cauliflower, onion, garlic, celery, and coconut oil. Boil 15 minutes until vegetables are soft.
- Stir in tomato sauce and meatballs; cook until flavors combine. Remove from heat and let sit 10 minutes before serving.
