Instructions:

  1. In a large pot, combine coconut oil, garlic, shallots, 1 teaspoon salt, and black pepper; sauté for 2 minutes.
  2. Add shrimp; stir fry for 3 minutes until shrimp starts to turn pink. Remove shrimp and set aside. Stir in vegetables.
  3. Add water, vegetable stock, lemon juice, and remaining salt; bring to a boil. Lower heat.
  4. Stir in rice noodles and parsley; continue cooking for 3 minutes.
  5. Stir in shrimp; continue cooking for 1 minute.
  6. To serve, garnish with additional parsley.
