Mini Cashew Cheesecakes
Total time: 10 minutes to prepare, 40 minutes to set
Makes: 20 mini cheesecakes
Ingredients:
- 3 cups cashew nuts, soaked for 4 hours
- 3/4 cup maple syrup
- 3/4 cup coconut oil
- 1/2 cup lemon juice
- 1 tablespoon pure vanilla extract
- Pinch of salt
Instructions:
- Soak the cashews in water for 4 hours, then discard the soaking liquid.
- Put all ingredients in a high-speed blender and whip until completely smooth. Line a cupcake tray with 20 paper cups.
- Spoon 1 heaping tablespoon of the cheesecake mixture into each cupcake cup.
- Set in the refrigerator for 40 minutes and they are ready to enjoy!
