Layered Watermelon Ice Pops
Serves: 12
Ingredients:
White Cashew Layer
- 1-1/2 cups cashews, soaked for at least 4 hours
- 1 small lemon
- 1/2 cup maple syrup
- 1/4 cup Nutiva Coconut Oil
- 1 Tbsp. vanilla extract
- 1/8 tsp. Redmond Real Salt
- 2 tsp. maca powder or lucuma powder (optional)
Green Cashew Layer
- 1 Tbsp. Phresh Greens
- 1/4 cup spinach
Watermelon Layer
- 6 cups watermelon
Instructions:
- Begin with the white cashew layer. In a high-speed blender, add all white layer ingredients including soaked cashews; blend until smooth. Remove half the mixture and set aside.
- To make the green cashew layer, add greens powder and spinach to the remaining half of the white cashew mixture and blend until smooth. Remove and set aside.
- Clean blender, add watermelon, and blend until smooth.
- To assemble the layered ice pops, spoon a heaping tablespoon of green mixture into each mold, then a heaping tablespoon of the white cashew mixture on top (do not mix; let the white sit on green). Fill the rest of the mold with blended watermelon.
- Freeze overnight.
Tips:
- For a more authentic presentation, save watermelon seeds and mix them back into the blended watermelon before pouring into molds. (Watermelon seeds are a great superfood!)
- If desired, layer ice pops in reverse: fill 2/3 of the mold with watermelon and freeze until solid, then add white cashew mixture, followed by green cashew mixture.
