Chocolate Date-Caramel Cups
Total time: 40 minutes
Serves: 24 cups
Ingredients:
Caramel
- 1 cup seeded medjool dates packed
- 2 Tbsp. SunButter Sunflower Butter
- 1 tsp. vanilla extract
- 1 tsp. maca powder
- ¼ tsp. Redmond Real Salt
- 2 Tbsp. Nutiva Coconut Manna
Chocolate
- 1-1/2 cups Hu Dark Chocolate Gems
Instructions:
- In a small bowl, soak dates in hot water for 10 minutes. Drain.
- In a food processor, combine all caramel ingredients and blend until thick and smooth. Remove and set aside.
- In a saucepan, melt chocolate over very low heat.
- Add 1 Tbsp chocolate to a large paper candy cup or 1/2 Tbsp to a small cup. Repeat with caramel, then top with a second spoonful of chocolate. Continue layering until all ingredients are used.
- Refrigerate for 20 minutes until set.
