Cashew Ice Cream Bites with Chocolate Sauce
Total time: 20 minutes blending and assembling, plus soaking and freezing time.

INGREDIENTS:
Cashew Ice Creams:
1½ cups cashews, soaked for 4 hours
Juice of 1 small lemon
½ cup maple syrup
¼ cup coconut oil
1 tablespoon vanilla extract
Dash of sea salt
1 tablespoon maca powder or lucuma powder (optional)
Chocolate Sauce:
2/3 cup cacao powder
½ cup maple syrup
¼ cup extra-virgin coconut oil
ACTIONS:
1. In a blender, blend all cashew ice cream ingredients on high until completely smooth. Tip: Use a Vitamix if you can, it completely whips the cashew mixture so there are absolutely no chunks at all.
2. Scoop the ice cream mixture on a baking tray with parchment paper to form little mounds.
3. Make the chocolate sauce by blending the three ingredients until completely smooth.
4. Add a spoonful of Chocolate Sauce to each ice cream bite. Freeze them for 2 hours or until they are completely set and keep in freezer. Add strawberries or anything you like on top!
