Ingredients:

  • 4 zucchinis
  • 1 cup fresh basil
  • 1/2 cup broccoli sprouts
  • Juice of 1 lemon
  • 4 garlic cloves
  • 1/2 teaspoon sea salt
  • 1/2 cup spinach
  • 2 cups raw walnuts
  • 1/2 cup extra-virgin olive oil (or more for smoother mixture)

Instructions:

  1. Make thin strips of zucchini using a vegetable peeler or pasta machine. Set aside.
  2. Place the remaining ingredients in a blender and blend until the pesto reaches desired consistency. Set aside.
  3. Distribute the zucchini evenly among 4 plates.
  4. Pour the pesto sauce over the zucchini pasta and serve.
