Zucchini Pasta with Broccoli Sprout Pesto

Makes: 4 servings
Ingredients:
- 4 zucchinis
- 1 cup fresh basil
- 1/2 cup broccoli sprouts
- Juice of 1 lemon
- 4 garlic cloves
- 1/2 teaspoon sea salt
- 1/2 cup spinach
- 2 cups raw walnuts
- 1/2 cup extra-virgin olive oil (or more for smoother mixture)
Instructions:
- Make thin strips of zucchini using a vegetable peeler or pasta machine. Set aside.
- Place the remaining ingredients in a blender and blend until the pesto reaches desired consistency. Set aside.
- Distribute the zucchini evenly among 4 plates.
- Pour the pesto sauce over the zucchini pasta and serve.
