Homemade Fruit & Seed Bars (Vegan & Gluten-Free)
Ingredients:
- 7 Tbsp. SunButter Sunflower Butter or almond butter
- ¾ cup Bob’s Red Mill Almond Flour
- ¼ tsp. flaxseed
- 5 Tbsp. honey
- ½ tsp. Simply Organic Vanilla Extract
- 1 tsp. Nutiva Coconut Oil with Buttery Flavor
- 4 dried apricots, diced (you could also use dates, figs, or cranberries)
- 1 Tbsp. water
Topping
- 2 tsp. sesame seeds
- 2 tsp. pumpkin seeds
- 2 tsp. sunflower seeds
- Honey, for glaze
Instructions:
- Preheat oven to 325 degrees F. Line baking tray with parchment paper.
- In a bowl, mix bar ingredients until well combined. The dough should be sticky, not too dry.
- Press mixture into pan. Add seeds to top. With a brush, glaze with honey.
- Bake for 11-12 minutes, until golden brown.
